Falafel can be served simply as little cakes, or can be stuffed into pitas, tortilla wraps, or any other handy carb. I dressed mine up with red cabbage, green onions, and some cool veggie cream cheese dressing that Chris made up. Cream cheese + green onions + chopped radish + chopped carrot + garlic, dill = Yum!

Delicious Falafel!
If you've never had falafel, I'll let you know right now that it's an awesome, crispy-savory entree made with chickpeas, onion, lemon, cayenne, and other spices. Recently, I had a craving, and decided that the price tag for the local Mediterranean restaurant was a bit high for a college student. Always willing to try new things, I took inspiration from the awesome blog Closet Cooking, and tried out the posted recipe which can be found here: http://www.closetcooking.com/2012/01/falafel.html
The only changes I made was to use dried basil and parsley instead of fresh herbs, and to use lemon juice instead of zest (to make up for the subtracted moisture from substituting dried herbs). Totally delish, this recipe made my week. Chris raved about it too, so I guess I'll have to make sure to keep chickpeas soaking all the time now, between my hummus, curry, and falafel cravings. They really are a magic ingredient!
